Chocolate Chip Biscuits



One of my favourite baked goods would have to be chocolate chip biscuits! Whenever I’m in a little cafĂ© for coffee with the girls and I see chocolate chip biscuits, I always just have to have one!

Biscuits are one of those things that even the most inexperienced cook can make. Not that I haven’t had a few bad experiences with baking biscuits, I’ve often burnt them or made them too greasy, but most of the time they turn out wonderfully and everybody loves a batch of freshly baked biscuits!

Anyway tonight I made a batch using a combination of a couple of recipes that I’ve tried recently. I like mine to be quite soft, only with a little bit of crunch and for them to be quite lightly coloured too.

Chocolate chip biscuits

100g unsalted butter
2 tablespoons sugar
2 tablespoons condensed milk
1 cup plain flour
1 teaspoon baking powder
½ cup chocolate chips
Few drops vanilla essence

Roll tablespoonfuls into small balls and flatten with a fork onto greased baking trays.

Bake at 160 degrees celsius for 15 -20 minutes or until golden.

My first post!!


Hello everyone!

My name is Lauren. Over the last few weeks I've spent many lunchtimes at work reading other people's blogs and it is so much fun! So I have finally decided that it is about time that I started my own!

My favourite blogs to read are cooking ones...reading about all of the delicious things people have made just makes my mouth water & often it gives me great dinner ideas too!

So I love to cook, I wouldn't say I am absolutely fabulous or anything, but I really do enjoy it. I love Nigella & Jaime Oliver, but I also enjoy cooking things from the Australian Womens Weekly cookbook and the good old New Zealand Edmonds Cookery Book - I think it would be my all time favourite. The recipes are simple ie most of the time you actually have everything that you require in your own cupboard which is fantastic but they are also delicous. So you may find that a lot of my blogs are from the Edmonds Cookery book.

Anyway I could seriously buy a new cook book everyday but when would I have the time to cook it all!

This week I actually got out a really old school cook book, in fact it is probably even more simple than Edmonds. This book called the CWA Cookery Book and Household Hints (even the name sounds old fashioned!) is great. It has so many different things to make and even contains food to cook for invalids such as family members with the flu!

Anyway I made this yummy Hedgehog Slice, which they actually call Hedgehog Cake. It requires no cooking at all, so it was perfect to whip up quickly, especially in the summer heat when its far too hot to have the oven on. If I can figure out how to add pictures I will put one up!!
