Chocolate Chip Biscuits



One of my favourite baked goods would have to be chocolate chip biscuits! Whenever I’m in a little café for coffee with the girls and I see chocolate chip biscuits, I always just have to have one!

Biscuits are one of those things that even the most inexperienced cook can make. Not that I haven’t had a few bad experiences with baking biscuits, I’ve often burnt them or made them too greasy, but most of the time they turn out wonderfully and everybody loves a batch of freshly baked biscuits!

Anyway tonight I made a batch using a combination of a couple of recipes that I’ve tried recently. I like mine to be quite soft, only with a little bit of crunch and for them to be quite lightly coloured too.

Chocolate chip biscuits

100g unsalted butter
2 tablespoons sugar
2 tablespoons condensed milk
1 cup plain flour
1 teaspoon baking powder
½ cup chocolate chips
Few drops vanilla essence

Roll tablespoonfuls into small balls and flatten with a fork onto greased baking trays.

Bake at 160 degrees celsius for 15 -20 minutes or until golden.

Good luck with the Edmonds - a breakfast cup is our std measuring cup, a teacup is 3/4 C if you happen to need that one too. Let us know how you get on.
